Grave Digging is currently the Best for me because of the profit you make from the Spades and also the wage you get also but once you have the skills Woodcutting or stone mining is best

its really annoyin (but makes a more realistic game) that all the really good jobs are likely to kill (or fatally wound) you unless you're superman.

I'd have to say stone mining is best for money, but as for xp, probably repairing fences, for my level, anyway.
