I feel like an idiot asking this, but it's better to ask and find out than not know. From working, I have many left over items, fish, quarters, tobacco, etc. What am I supposed to do with these? Sell them? Where? Thanks.

You can sell them at the town shops, but unless you are sure you won't need the products for quests or forts, I'd hold on to them. This is especially true for products that take a lot of work to get. They might be worth more selling them, but you might be kicking yourself later if you find out you needed the item for a quest that would have paid even more.
