So does stamina help you to lower the hits you receive in a duel? I mean, a lot of builders wear clothes that increase stamina, so I was wondering if that helps in some way...

all that stamina does before the upcoming patch is raise the hit points and is a Used Skill Point on certain jobs

If they're a builder they probably put most/all their attribute points into strength, which raises their construction (for building, which is what they are after) but also happens to raise their vigor.
So builders are better equipped to have melee dueling weapons which takes vigor than firearms which takes shooting. So them having +vigor items is just an attempt to better protect themselves from duelers.
