A Christmas pickle is a traditional german ornament in the christmas tree.
for good luck, the pickle always was the last ornament to be hung on the tree with the parents hiding it between the other decorations.
Whoever found the pickle first, the most eager child, would receive and extra gift for christmas

The Christmas pickle is a lesser-known Christmas tradition for some Americans. A Christmas tree decoration in the shape of a pickle is hidden on a Christmas tree, with the finder receiving either a reward (extra present) or good fortune for the next year. This tradition is commonly believed by Americans to come from Germany and be referred to as a Weihnachtsgurke although it is not. In Germany, St. Nick comes much earlier in the month, so the pickle would have been long found by the time Weihnacht rolled around. It doesn't appear that in Germany there is such a thing as the German Christmas Pickle at all.

Woolworth's, the great five-and-dime store, started importing German-made glass-blown Christmas ornaments into the United States in the 1880s. Many of the ornaments took the shape of fruits and vegetables, and among them were pickles. There is no sign that the pickles held any special importance to the German ornament-makers, though. And it is possible that pickles simply didn't sell as well as other ornaments, on account of their color being roughly the same as that of an evergreen Christmas tree, and thus, hard to spot when hanging on a tree. Therefore, Woolworth's attached to the pickles a card explaining this "ancient German tradition," and the legend, for whatever reason, took off. (Pickle ornaments today still have these cards attached, explaining the "German tradition.")

Where does the Christmas cucumber come from?
The reason for the cucumber in the Christmas tree is said to have been the poverty of families: there was not enough money to put a present under the tree for each child. So a cucumber was hidden in the Christmas tree. The child who discovered the cucumber first, without touching the tree, got the gift.

The tradition is known as Weihnachtsgurke, which literally translates to "Christmas Eve Cucumber." A lot of German-American families have Christmas pickle ornaments. Someone in the family hides the pickle on Christmas Eve, and the first to find it either gets an extra present, the right to open the first present, or good luck for a year.

In America, a pickled cucumber is placed on the Xmas tree. The first one to find it is said to have good luck for the coming year

For some it is the tradition to place an ornamental pickle in the christmastree. The first person to find it on christmas morning, receives an extra present from Santa Claus, or would have a year of good fortune.

american trad. Some say it's from germany and a commercial thing - but this is now held as less likely.
Then there's private John C Lower who was said to have survived thanks to a pickle while starving in a camp during the american civil war. He then started a find the pickle game at home to remember this pickle that saved him from starvation.
OR
Saint Nicholas saved two spanish children from a barrel of pickles (poor children!!!) or something even worse but resurrected but in any case st Nicholas is a hero in this version.
I'm not sure this covers the why... maybe you just wanted to know about the find the pickle in the christmas tree game. Well, it's my answer :)

The Legend of the Christmas Pickle: When decorating the Christmas Tree, it is traditional to hang the Pickle last, hidden amongst the twigs. The first child on Christmas Eve to find the Christmas Pickle receives an extra gift.
